The Virgin Islands is famous for a number of tasty alcoholic treats that seem to hit the spot much more than they might in a chillier clime. While you're sitting around the pool, reveling over your inactive state, why not experiment a little? Try some iced coffee with a kick (1/2 cup brewed coffee - don't consider instant for a second!, 1/2 oz Coco Lopez and 1 oz Cruzan white rum. Mix together and pour over ice in a tall glass) or a Chocolate Hole - as in C.H., St John -(1 oz Baileys, 1 oz Frangelico, 2 Tbsp chocolate syrup, 2-3 Tbsp heavy cream, handful of crushed ice. Put in blender and blend till smooth). As with all cooking, amounts are pretty much open to interpretation. Liquor is cheap here - play a little!
